Ingredients

  • 250ml whipping cream
  • 2 tbsp icing sugar
  • 2 tbsp (approx.) smooth peanut butter
  • 6 bananas, unpeeled, halved lengthways
  • 2 tbsp melted butter
  • 2 tbsp salted peanuts, crushed

Method

  • Step 1

    Combine the whipping cream, icing sugar and peanut butter in a bowl; whip to soft peaks with an electric whisk. Set aside.

  • Step 2

    Brush the cut sides of the bananas with the melted butter. Place, cut-side down, on the barbecue over direct heat and cook for 2-3 mins, until lightly charred.

  • Step 3

    To serve, arrange 2 banana halves on each plate and top with a dollop of the cream. Scatter over the crushed peanuts and get scooping.
