
Bean Salad

This is a really simple and quick salad to make, and is suitable for vegetarians and vegans.Time and servings

Ingredients
- 1 red pepper, cored, deseeded and chopped
- 2 tsps of fresh lemon juice
- 400 g of can black eye beans, rinsed and drained
- 400 g of can cannellini beans
- 25 g of fresh parsley, chopped
- 2 tbsp of extra virgin olive oil
- 1 pinch of freshly ground black pepper
Method
Step 1
Drain the beans in a colander and rinse thoroughly with cold, filtered water and set aside.Step 2
Quarter the pepper and remove the seeds.Step 3
Place the pepper pieces skin side up on foil on a grill pan and grill until blackened (10 - 15 minutes).Step 4
When the pepper has cooled sufficiently, remove the skin.Step 5
Chop up the pepper into small pieces and add to a large salad bowl.Step 6
Add the beans to the dish with the other ingredients.Step 7
Chop up all the parsley and add to the bowl with the oil and the lemon juice. Stir thoroughly.
