
Beef Bulgur and Couscous with Green Beans

This purse-friendly, gluten-free Beef Bulgur and Couscous with Green Beans from food writer and stylist Sarah Cook is based on Iran’s popular loobia polo, a comforting spiced green bean dish. This version features a nutty mix of bulgur wheat and couscous, and only uses five ingredients. The pilau seasoning ramps up flavour – you can use any left over to jazz up rice in other dishes by frying the grains in 1-2 tsp with a little ghee before boiling. This is a high-protein recipe.

Ingredients
- 500g beef mince (12% fat)
- 100g tomato purée
- 3 tbsp pilau rice seasoning
- 320g trimmed fine green beans
- 200g bulgur wheat & couscous
Method
Step 1
Heat a large, dry frying pan over a high heat. Add the mince and cook for 8 mins, breaking it up with a wooden spoon, until browned.Step 2
Stir in the tomato purée and pilau seasoning, fry for 2 mins more, then add the green beans and bulgur and couscous mix. Stir well, then pour over 800ml just-boiled water and bring to the boil, ensuring the beans are submerged.Step 3
Cover with a lid, reduce the heat to medium-low and simmer for 15 mins. Turn off the heat and leave to stand for 5 mins without lifting the lid – after this, the bulgur and couscous will be soft and the beans just cooked. Season to taste, then serve. Leftovers will keep chilled for 3 days or freeze for up to 3 months.
