
Beef burger with smoked cheese, green chilli salsa, pickles and red cabbage slaw

Ingredients
- 4 quarter pounder beef burgers
- 4 slices of oak-smoked cheddar
- 0.25 red cabbage, finely sliced (for the slaw)
- 1 tbsp of mayonnaise, (for the slaw)
- 1 lime, juice only (half for the slaw, half for the salsa)
- 3 green chillies, deseeded and chopped (for the salsa)
- 1 banana shallot, chopped (for the salsa)
- 10 g of coriander, (for the salsa)
- 1 red onion, finely sliced (for the slaw)
- 4 sesame seed buns
- 60 g of sliced gherkins
Method
Step 1
Add the salsa ingredients to a bowl, season and stir.Step 2
In another bowl, mix the slaw ingredients, adding the lime juice to taste.Step 3
Cook the burgers on a hot barbecue for 6 mins, turning every 2 mins. Then lay the slices of smoked cheese on top and cook for 2 mins with the lid on to melt the cheese.Step 4
Remove the burgers and add the buns to the barbecue, cut side down, to toast.Step 5
Assemble in the bun, burger first, followed by gherkins, slaw and salsa.
