Beetroot, Feta & Oat Burgers

A real show stopper! Serve in a sourdough bun and get creative with the toppings! Try adding some crisp gem lettuce, mango salsa, sweet onion relish or some avocado.

Ingredients

  • 5 raw beetroots, peeled and grated
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 2 tbsp of olive oil
  • 2 eggs, beaten
  • 250 g of moma gluten free jumbo oats
  • 200 g of feta cheese
  • 1 handful of fresh basil

Method

  • Step 1

    Place the beetroot, garlic, onion, olive oil and eggs in a large mixing bowl and mix together.
  • Step 2

    Take 100g of the jumbo oats and blitz together in a food processor and then add to the mix, along with the remaining 150g of oats
  • Step 3

    Add the feta cheese, basil, salt and pepper and stir to combine.
  • Step 4

    Place in the fridge for about 30-45 minutes, so the oats can soak up the liquid and the mixture sets (this step is important for the patties to hold together).
  • Step 5

    Once chilled, form patties with your hands. If the mixture is a little too loose add a few more oats.
  • Step 6

    Add some oil to a frying pan at medium - high heat and fry on both sides until golden.
