
Beetroot, Feta & Oat Burgers

Ingredients
- 5 raw beetroots, peeled and grated
- 1 onion, finely diced
- 2 garlic cloves, crushed
- 2 tbsp of olive oil
- 2 eggs, beaten
- 250 g of moma gluten free jumbo oats
- 200 g of feta cheese
- 1 handful of fresh basil
Method
Step 1
Place the beetroot, garlic, onion, olive oil and eggs in a large mixing bowl and mix together.Step 2
Take 100g of the jumbo oats and blitz together in a food processor and then add to the mix, along with the remaining 150g of oatsStep 3
Add the feta cheese, basil, salt and pepper and stir to combine.Step 4
Place in the fridge for about 30-45 minutes, so the oats can soak up the liquid and the mixture sets (this step is important for the patties to hold together).Step 5
Once chilled, form patties with your hands. If the mixture is a little too loose add a few more oats.Step 6
Add some oil to a frying pan at medium - high heat and fry on both sides until golden.
