Ingredients
- 1 small raw beetroot, scrubbed, trimmed and chopped
- 100g frozen summer fruits
- 100g silken tofu
- 2 tsp acai powder
- 1 tsp agave syrup, plus extra to taste (optional)
Method
Step 1
Put the beetroot in a blender with the frozen summer fruits (reserve a few berries to garnish, if you like), silken tofu, acai powder, agave syrup and 100ml water.Step 2
Whizz until smooth. Taste and add a little extra syrup or water as needed, then pour into a glass and top with a few berries, if you like.
