
Beetroot Houmous

Beetroot is packed with vitamins and it makes the houmous turn bright pink giving it a real 'wow' factor.
Encourage children to help by peeling and grating the beetroot, washing the vegetables and operating the food processor or blender with adult supervision.Time and servings

Ingredients
- 2 raw beetroot, washed
- 4 tablespoons of natural yoghurt
- 1 tbsp of extra virgin olive oil
- 4 wholemeal pitta breads
- 1 cucumber, to serve
- 1 carrot, to serve
- 1 pepper, to serve
- 1 tin of chickpeas, drained and rinsed
- 1 lemon, juiced
- 1 garlic clove, chopped
Method
Step 1
Peel and grate the beetroot.Step 2
Place all the ingredients except the pitta and vegetable sticks in to food processor or blender and whizz until pureed.Step 3
Transfer to a bowl and serve with warm pitta bread and sticks of cucumber, carrot and pepper.
