Beetroot Houmous

Beetroot is packed with vitamins and it makes the houmous turn bright pink giving it a real 'wow' factor. Encourage children to help by peeling and grating the beetroot, washing the vegetables and operating the food processor or blender with adult supervision.

Ingredients

  • 2 raw beetroot, washed
  • 4 tablespoons of natural yoghurt
  • 1 tbsp of extra virgin olive oil
  • 4 wholemeal pitta breads
  • 1 cucumber, to serve
  • 1 carrot, to serve
  • 1 pepper, to serve
  • 1 tin of chickpeas, drained and rinsed
  • 1 lemon, juiced
  • 1 garlic clove, chopped

Method

  • Step 1

    Peel and grate the beetroot.
  • Step 2

    Place all the ingredients except the pitta and vegetable sticks in to food processor or blender and whizz until pureed.
  • Step 3

    Transfer to a bowl and serve with warm pitta bread and sticks of cucumber, carrot and pepper.
