
Beetroot Kimchi Pancakes

These vibrant, spicy pancakes make a quick and exciting meal. Using cornflour helps them crisp up beautifully in the pan.

Ingredients
- 400g Vadasz Super-Beet Kimchi 400g
- 4 salad onions, finely sliced
- 75g cornflour
- 1 tbsp olive oil
- 2 tbsp wakame, we used Yutaka Seasoned Wakame Seaweed Salad
- 2 tbsp sweet chilli sauce
Method
Step 1
Tip the kimchi into a bowl with its liquid. Add half of the salad onions and the cornflour, mix well to combine.Step 2
Heat half the oil in a large non-stick pan over a medium-high heat.Step 3
Spoon the mixture into the pan to make 3 pancakes. Flatten them slightly with a spatula.Step 4
Fry for 3-4 mins on each side until crisp and hot through.Step 5
Repeat with the remaining oil and batter to make 3 more pancakes.Step 6
To serve, divide between 2 plates, then top with the wakame, sweet chilli and remaining salad onions.
