Ingredients
- 300 g of self raising flour
- 1 tsp of baking powder
- 150 g of sugar
- 1 lemon, (Zest Only)
- 150 g of berryworld blueberries
- 1 egg
- 225 ml of milk
- 50 ml of vegetable oil
Method
Step 1
Heat the oven to 200C/ 180C fan and line a muffin tin with 10 paper cases.Step 2
Put the flour, baking powder, sugar, lemon zest and blueberries into a bowl and stir to combine.Step 3
In a jug, mix the egg, milk and vegetable oil with a fork until combined.Step 4
Pour the wet ingredients into the dry ingredients and stir. Don’t over mix, it’s fine to have a few lumps.Step 5
Divide between the muffin cases and bake for 20 minutes until they are risen and pale gold.Step 6
Leave to cool then keep in an airtight tin for up to 3 days.
