
Billington’s Chocolate Chip Cookies

Ingredients
- 100 g of dark chocolate chips
- 80 g of billington's unrefined golden caster sugar
- 80 g of billington's unrefined light muscovado sugar
- 135 g of unsalted butter
- 1 large of free range egg
- 0.5 tsp of vanilla extract
- 190 g of plain white flour
- 0.5 tsp of salt
- 0.5 tsp of bicarbonate of soda
Method
Step 1
Preheat the oven to 170ºC/gas mark 3, and line 2 baking sheets with baking parchment.Step 2
Cream together the butter and both sugars until pale then add the egg and vanilla extract and mix together well.Step 3
Sift in the flour, salt and bicarbonate of soda and add to the butter sugar mixture and mix thoroughly until a dough forms, then stir in the chocolate chips.Step 4
Break off pieces of the dough about one tablespoon in size and roll into balls.Step 5
Place these on the baking sheet leaving about 5cm space in between each to allow for them spreading out during baking.Step 6
Place in the oven and bake for 15-20 minutes or until the cookies are light golden brown.
