These fudgy, rich, dark chocolate brownies are the perfect decadent vegan treat with a healthy twist, so tasty you'll forget they're good for you. Ingredients
- 800 g of tinned black beans, drained and dried
- 110 g of coconut oil cuisine
- 100 g of coconut palm sugar
- 170 g of maple agave syrup
- 65 g of cocoa powder, sifted
- 1 tsp of baking powder
- 4 tsp of vanilla extract
- 0.5 tsp of salt
- 250 g of apple puree
- 200 g of dark chocolate, finely chopped
Method
Step 1
Preheat the oven to 170°C/150°C fan/gas 3. Line and grease a 20cm square brownie tin with baking paper.Step 2
In a food processor or blender, add the beans, coconut oil, coconut palm sugar, and maple agave syrup and blitz until smooth.Step 3
Add in the cocoa powder, baking powder, vanilla and salt, and blitz again.Step 4
Remove the centre of the food processor if using, and stir through the apple puree to fully combine. Fold in ¾ of the chocolate chips.Step 5
Pour the brownie mixture into the prepared tin and evenly top with the rest of the chocolate chips.Step 6
Bake for 1 hour or until a toothpick inserted comes out clean. Take out of the oven to cool before transferring to a cooling rack for 15 mins.Step 7
Cut into 16 brownie squares. Serve and enjoy!
