Creamy, easy to make and with zero chopping needed, this morish meal by MOB Kitchen is made with orzo and black garlic for an extra kick.

Ingredients

  • 650 g of cherry tomatoes
  • 1 block feta
  • 3 tbsp of olive oil
  • 3 tsp of black garlic paste
  • 0.5 tsp of chilli flakes
  • 1 tbsp of red wine vinegar
  • 400 g of orzo
  • 1 small handful of basil leaves
  • 1 small handful of pine nuts
  • 1 tsp of dried oregano

Method

  • Step 1

    Preheat the oven to 180°C/160°C fan/gas 4. Drop your tomatoes into a large baking tray so they’re all lying flat, then pop your block of feta on top.
  • Step 2

    In a bowl, combine 3 tbsp olive oil, black garlic paste, oregano, chilli flakes, red wine vinegar, a pinch of salt and a few cracks of black pepper.
  • Step 3

    Pour the olive oil sauce over the feta and tomatoes and bake in the oven for 30 mins. Once the time is up, turn up the heat to 200°C/180°C fan/ gas 6 to char the tomatoes for 15 mins. Then cook the orzo for 6 mins in boiling water.
  • Step 4

    Mash up the tomatoes and feta with a fork to form a creamy sauce. Pour on your cooked orzo and mix well. Add some pasta water to loosen the sauce if needed – this usually depends on how juicy your tomatoes were.
  • Step 5

    Tear the basil leaves, sprinkle on the pine nuts et voila; dinner is served.
