
Blackberry, Pear and Pecan Tart

Sweet, caramelised pears, shiny blackberries and warming cinnamon join forces in this well-balanced, rustic tart to showcase some of the best flavours of the autumn season. Ready in under an hour, it looks really impressive but is deceptively easy to put together, especially when you use readymade pastry. Time and servings

Ingredients
- 40 g of butter
- 40 g of caster sugar
- 1 tsp of cinnamon
- 4 pears, cored and sliced into 1cm wedges
- 150 g of blackberries
- 230 g of ready rolled shortcrust pastry
- 50 g of pecans, broken
- 50 g of demerara sugar
Method
Step 1
Preheat oven to 190°C/170°C fan/gas 5. Put the butter, sugar and cinnamon in a frying pan and cook over a low heat to melt. Add the pear slices and cook over a medium heat for about 5 mins, until caramelised and syrupy. Leave to cool slightly, then mix in the blackberries.Step 2
Unroll the pasty onto a lined baking sheet and spoon the pear and blackberry mixture into the middle, leaving a 3cm edge. Top with the pecans, then fold over the edges of the pastry, crimping them a little, to encase the filling.Step 3
Sprinkle with demerara sugar and bake for 15-20 mins, until golden and oozing. Slice and serve with cream or ice cream.
