Ingredients

  • 75 g of butter, melted and cooled slightly
  • 150 g of caster sugar
  • 150 ml of milk
  • 200 g of plain flour
  • 2.5 tsp of baking powder
  • 1 egg
  • 0.5 tsp of vanilla essence
  • 2 braeburn apples, peeled and grated
  • 150 g of blackberries
  • 1 pinch of cinnamon, optional

Method

  • Step 1

    Line a tin with paper muffin cases.
  • Step 2

    Sift the flour and baking powder together.
  • Step 3

    Whisk together the egg, butter, caster sugar and vanilla essence. Add the milk and prepared fruit, reserving 12 blackberries. Mix.
  • Step 4

    Quickly fold in the flour, baking powder and cinnamon, if using.
  • Step 5

    Divide the mixture between the paper cases, pressing a blackberry into the top of each one.
  • Step 6

    Bake in the preheated oven for 25-30 minutes.
  • Step 7

    Cool on a wire rack.
