Ingredients
- 75 g of butter, melted and cooled slightly
- 150 g of caster sugar
- 150 ml of milk
- 200 g of plain flour
- 2.5 tsp of baking powder
- 1 egg
- 0.5 tsp of vanilla essence
- 2 braeburn apples, peeled and grated
- 150 g of blackberries
- 1 pinch of cinnamon, optional
Method
Step 1
Line a tin with paper muffin cases.Step 2
Sift the flour and baking powder together.Step 3
Whisk together the egg, butter, caster sugar and vanilla essence. Add the milk and prepared fruit, reserving 12 blackberries. Mix.Step 4
Quickly fold in the flour, baking powder and cinnamon, if using.Step 5
Divide the mixture between the paper cases, pressing a blackberry into the top of each one.Step 6
Bake in the preheated oven for 25-30 minutes.Step 7
Cool on a wire rack.
