
Bloomin' Tasty Onions with Cajun Spiced Dip

Get inventive with onions in this easy yet creative recipe which will help you use up these everyday veggies. Onions release and develop their flavour when being chopped, sliced or cooked. Deep frying the onion whole not only gives serious crispiness, but looks pretty too when it blooms. Whether as a snack or starter, we've coated our bloomin’ onion in smoky paprika, warming cumin and slightly lemony thyme, served with a lightly spiced Cajun dip. If Cajun seasoning isn’t available, swap for an alternative seasoning mix.Time and servings

Ingredients
- 1 large onion, peeled and tip sliced off,
- 200 g of plain flour
- 0.5 tbsp of paprika
- 0.5 tbsp of oregano
- 0.5 tbsp of thyme
- 0.5 tbsp of cumin
- 1 tsp of garlic powder
- 2 medium eggs
- 50 ml of semi skimmed milk
- 1 vegetable oil, for frying
- 3 tbsp of tomato ketchup
- 3 tbsp of mayonnaise
- 0.5 tbsp of cajun seasoning
Method
Step 1
Cut-side down, make slices in the onion, keeping ½ an inch away from the root. Repeat until you have 12-16 petals. Turn the onion over and carefully spread the petals out.Step 2
Mix the plain flour, paprika, oregano, thyme, cumin, garlic powder, ¼ tsp salt and ¼ tsp black pepper in a bowl. In a separate bowl, whisk together the eggs and milk.Step 3
Place the onion in the flour mixture and thoroughly coat. Shake off excess flour and place into the egg mixture, covering all the petals. Drain off excess and place back in the flour.Step 4
In a large saucepan, pour in enough oil to cover the onion. Heat to 180°C. Slowly submerge the onion into the oil and fry for 2-3 mins, before carefully turning it over and cooking for a further 2-3 mins or until golden. Remove from the pan and allow to drain.Step 5
Make the Cajun dip by mixing together the tomato ketchup, mayonnaise and Cajun seasoning. Tear off the onion petals and dip to serve.
