Reimagine the classic sarnie with this BLT Salad from OcadoLife food editor Lauren Hoffman. So much more than the sum of its parts, with crispy serrano ham, charred lettuce and juicy tomatoes, it’s everything you want from a light, bright meal. To make it more substantial, add a hard-boiled egg or some crumbled blue cheese.

Ingredients

  • 1 tbsp Dijon mustard
  • 1 tbsp sherry vinegar or apple cider vinegar
  • 2 tsp runny honey, to taste
  • 3 tbsp extra-virgin olive oil
  • 1 tsp olive oil, plus extra for brushing
  • 70g pack serrano ham
  • 2 little gem lettuces, halved
  • 3 tomatoes, quartered
  • 1 small avocado, sliced (optional)
  • 2 slices crusty bread, to serve (optional)

Method

  • Step 1

    To make the dressing, whisk the mustard, vinegar and honey until combined. Whisk in the extra-virgin olive oil until thickened and emulsified, then season to taste.
  • Step 2

    Heat 1 tsp olive oil in a large pan over medium-high heat. Place the serrano ham slices flat in the pan and cook for 2 mins on each side or until golden. Remove to a plate lined with kitchen paper to cool and crisp up.
  • Step 3

    Return the pan to the hob over high heat. Brush the cut side of the lettuces with a little oil, then season. Sear, cut-side down, for 3 mins until charred.
  • Step 4

    Divide the charred lettuce, tomatoes and avocado (if using) between plates, then spoon over the dressing. Break the ham into shards and scatter over the top. Serve with crusty bread, if you like.
