Blue Cheese Pasta Sauce

Ingredients

  • 500 g of doves farm gluten free organic brown rice penne
  • 2 onions
  • 4 celery stalks
  • 25 g of butter
  • 200 g of blue cheese
  • 150 g of ricotta cheese
  • 300 ml of milk
  • 1 pinch of black pepper

Method

  • Step 1

    Chop the onion and celery as finely as possible.
  • Step 2

    Melt the butter in a saucepan and add the onion and celery.
  • Step 3

    Cook gently until they are soft.
  • Step 4

    Mix together the blue cheese, ricotta and milk.
  • Step 5

    Mix this into the onion and celery.
  • Step 6

    Meanwhile cook the pasta in a large pan of lightly salted, boiling water until almost soft. Stir occasionally to prevent sticking.
  • Step 7

    Drain the cooked pasta add the cheese sauce and mix well. Add black pepper to taste and serve immediately.
