
Blueberry lemonade

Ingredients
- 200 g of golden caster sugar
- 8 lemons, juiced (about 220ml)
- 1 l of water, cold
- 1 handful of ice cubes
- 1 sprig of fresh mint, to garnish
- 200 g of blueberries
Method
Step 1
In a food processor or high-speed blender, whizz the blueberries, sugar, lemon juice and 250ml water together until the berries are completely puréed and the sugar is dissolved.Step 2
Pour into a pitcher and stir in the rest of the cold water gradually, to taste (you may not need it all).Step 3
Chill in the fridge if needed, stir again and serve over ice. Add a sprig of mint to garnish.
