
Blueberry Puffs

Ingredients
- 1 egg, beaten
- 100 g of blueberries
- 150 ml of double or whipping cream
- 1 tbsp of caster sugar
- 1 ripe nectarine or 2 ripe plums, stoned and sliced
- 1 tbsp of icing sugar, for dusting
- 500 g of ready-made puff pastry
Method
Step 1
Roll out the pastry to 5mm thick on a lightly floured surface. Cut into strips 5cm wide, then cut the strips into pieces 7cm long.Step 2
Place on a dampened baking tray and glaze with beaten egg.Step 3
Bake in a preheated oven at 230°C/210°C fan/gas 8 for 10-15 minutes until golden. Transfer to a wire rack. Leave to cool.Step 4
Cut each oblong in half through the middle to make a top and a bottom, like a sandwich. For less pastry you can remove a layer from each half to make it slimmer.Step 5
Divide half of the blueberries among the bottom halves. Whip the cream and sugar and spread on top of the blueberries. Add a layer of thin nectarine slices (or plums if in season), then the remaining blueberries. Put the top halves of pastry back on, dust with icing sugar, and serve.
