
Blueberry Yoghurt Cups

Ideal as an after-school snack, these blueberry cups from Annabel Karmel are created exclusively for BerryWorld. They’re made with a crunchy granola base and topped with creamy yoghurt. They’re also packed with blueberries, which work nicely with the sweet honey. Super easy to make, these little cups are set to boost that post-school lull.Time and servings

Ingredients
- 30g of butter
- 15g of soft light brown sugar
- 125g of granola
- 500g natural yoghurt
- 2 tbsp of runny honey
- 200g of berryworld blueberries
Method
Step 1
Melt the butter in a saucepan. Add the sugar and stir until dissolved.Step 2
Add the granola and stir to coat.Step 3
Spoon the granola mixture into 12 silicone muffin cases in a muffin tin and press into the bases.Step 4
Mix the yoghurt and honey together in a bowl and spoon the mix on top of the granola bases.Step 5
Add the blueberries and push them gently into the yoghurt.Step 6
Freeze the muffin tin for 6 hours until frozen (it’s easiest to do this overnight).Step 7
Remove the yoghurt cups from the muffin tin, and enjoy.
