
Boursin and Crisp Omelette

Inspired by the buttery, chive- and crisp-topped omelette on HBO TV show The Bear, we’ve made our own four-ingredient version with a classic British twist: Walker’s Cheese & Onion crisps. Simply crumble over the crisps to serve for added crunch to your silky smooth Boursin-stuffed omelette. Cooking the eggs over a low temperature takes a little time but makes sure the egg cooks evenly, without colouring and keeps them super creamy. Looking for more breakfast recipes? Ingredients
- 3 medium eggs
- 2 tbsp butter
- 3 tbsp Boursin Garlic and Herbs Soft French Cheese
- 25g pack Cheese & Onion Walkers Crisps
Method
Step 1
Set a sieve over a mixing bowl, crack the eggs into the sieve and gently whisk with a fork until the egg has passed into the bowl below. Remove the sieve and discard any of the egg residue left. Add a pinch of fine salt to the mixing bowl and gently whisk.Step 2
Set a 20cm non-stick frying pan over a low heat and melt 1 tbsp butter. Spread the butter over the base of the pan and pour in the egg.Step 3
Gently move the egg around the pan to cook evenly, scraping down the sides as you go. After about 3 mins when the egg is almost set, crumble the Boursin cheese in a line just off centre.Step 4
Using a spatula, fold the smaller edge of the omelette over the cheese and tip the pan gently to create a rolled omelette.Step 5
Gently tip the omelette onto a plate, rub with the remaining 1 tbsp butter then crumble over some crisps. Top with freshly grated black pepper and serve with the remaining crisps on the side.
