
Boxing Day Gammon Sandwich

Leftover sandwiches are a staple part of the festive period as much as the centrepiece on the big day. This year, we’ve ditched turkey and made a Boxing Day Gammon Sandwich the star of the show. Fried with cranberry sauce and piled high with sprout slaw this is salty, sweet, crunchy and seriously satisfying.Time and servings

Ingredients
- ¼ red cabbage, finely shredded
- 10 Brussels sprouts, finely shredded
- 2 carrots, grated
- 4 tbsp plain yoghurt
- 4 tbsp mayonnaise
- 1 tbsp chives, finely chopped
- 8 slices bread
- 4 tbsp butter
- 8 slices gammon
- 4 tbsp cranberry sauce
Method
Step 1
Toss the cabbage, sprouts, carrots, yoghurt, mayonnaise, chives and plenty of salt and pepper in a large mixing bowl until well combined. Set aside.Step 2
Spread one side of each slice of bread with butter.Step 3
Set a large frying pan over a medium heat then add the bread, butter side-down, and fry until golden. Spread 1 tbsp cranberry sauce over two slices. Set aside to keep warm.Step 4
Add the sliced gammon to the pan and spread a little cranberry sauce over each slice, fry for 1 min on each side until golden and warm through.Step 5
Put 2 slices of gammon on 4 slices of toast, pile on the sprout slaw then sandwich on the remaining toast and squash down to sandwich. Slice to serve.
