Ingredients

5 total
  • 6 leeks, washed and dried
  • 1 red chilli, halved and deseeded
  • 2 tbsp of white miso paste
  • 1 tbsp of olive oil
  • 25 g of unsalted butter

Method

3 steps
  1. Step 1

Preheat the oven to 170°C/150°C fan/gas 3. Shred the green tops of the leeks and set aside. Put the white parts of the leeks in a large casserole dish with the chilli. Mix the miso with 400ml boiling water and pour into the dish. Bake for 50 mins, or until the leeks soften and brown a little.

  2. Step 2

Meanwhile, heat the olive oil in a frying pan over a medium-high heat. Fry the shredded leek tops for a few mins until they darken and start to crisp up; set aside.

  3. Step 3

Remove the casserole dish from the oven; put over a high heat. Add the butter; bubble for 3-5 mins until you have a thick glaze. Scatter over the leek tops to finish.
