Anyone who loves brandy butter won’t be able to resist this Brandy Butter Popcorn – just the thing for sofa snacking in front of the TV. Super easy, gluten free and fun to make, this delicious nibble from food writer and editor Caroline Morrish is a great way to use up leftover butter from Christmas – but there’s a good chance you’ll want to make it all year round. Ingredients
- 2 tbsp vegetable oil
- 100g popcorn kernels
- 70g brandy butter
- 2 tsp caster sugar
- 1 tsp ground cinnamon
Method
Step 1
Heat the vegetable oil in a large pan. Add the popcorn kernels, shake to coat, then put on the lid. Cook, shaking the pan often, until the popping stops.Step 2
Take the pan off the heat, dollop on the brandy butter and toss to coat well. Sprinkle with the caster sugar and ground cinnamon; toss again.Step 3
Pour onto a lined baking sheet in an even layer and leave to cool. Store for up to 1 day in a tightly lidded container.
