Breaded Pork Steaks with Katsu Sauce

Ingredients

  • 4 pork steaks or medallions
  • 150 g of plain flour, plus 1tbsp
  • 2 medium free range eggs, whisked
  • 150 g of panko breadcrumbs
  • 1 tbsp of oil
  • 1 onion, diced
  • 1 large carrot, diced
  • 1 garlic clove, chopped
  • 3 tbsp of medium curry powder
  • 350 ml of chicken stock
  • 1 pinch of sugar
  • 1 cup of vegetable oil, for frying
  • 4 portions of rice, to serve
  • 1 cucumber, sliced to serve
  • 1 handful of red chilli

Method

  • Step 1

    To tenderise the pork, gently bash the steaks between two sheets of baking paper until about 1cm in thickness. Put the flour, eggs and breadcrumbs on three separate plates, adding a pinch of salt and pepper to the flour. Firstly dip each pork steak into the flour, then the eggs and lastly the breadcrumbs ensuring they are all fully coated. Continue with the following 3 pork steaks then leave to chill while you make the sauce.
  • Step 2

    Heat 1 tbsp of oil in a saucepan over a medium heat and fry the onion and carrot for 6-7 mins or until softened. Add the garlic and cook for a further 1 min. Add the curry powder and 1 tbsp flour and cook for 2 mins more. Pour in the chicken stock and a pinch of sugar then bring to a simmer for 10-15 mins or until thickened. Take off the heat to cool slightly before blending to make a smooth sauce. Return to the pan and keep warm.
  • Step 3

    In a large, deep frying pan add enough vegetable oil so it comes up around 4-5cm. Heat the oil over a medium-high heat until it reaches 180°C. You can check if it is ready by using a thermometer or by adding a cube of bread to the oil and if it starts to sizzle after 5 seconds then it’s ready.
  • Step 4

    Carefully add the pork steaks to the pan one at a time and fry for 2-3 mins on each side or until golden. Once cooked, put onto a plate lined with kitchen towel to soak up any excess oil and then slice.
  • Step 5

    Serve with the katsu sauce, rice, sliced cucumbers and sliced chillies, if you like.
