A great way to use up left over turkey or chicken for a protein rich and healthy lunch!

Ingredients

  • 2 good handfuls of spinach
  • 1 small handful of cranberries, optional
  • 200 g of brie, or your preference of blue cheese, sliced.
  • 1 small handful of pistachios, optional
  • 4 tbsp of rubies in the rubble pear, fig and port chutney
  • 4 tortilla wraps

Method

  • Step 1

    Place the tortilla on a microwave safe plate. Add the brie pieces side by side to cover a wide strip down the middle of the tortilla. Microwave on high for 10-20 seconds, or until brie is slightly melted.
  • Step 2

    Add the spinach and sprinkle of pistachios and cranberries.
  • Step 3

    Finish off with a generous dollop of Rubies Pear Fig & Port Chutney.
  • Step 4

    Roll the wraps tightly and enjoy.
