
Broccoli and Potato Soup

Ingredients
- 4 large of baking potatoes
- 2 pint of vegetable stock
- 300 g of broccoli
- 1 tsp of extra virgin olive oil
- 6 shallots
- 1 garlic
- 50 g of natural yoghurt
Method
Step 1
Heat the oil, with the shallots, garlic and potatoes. Cover and sweat for 3 to 4 minutes before adding the Swiss bouillon and bringing to the boil.Step 2
Simmer for 5 mins and then add the broccoli florets. Simmer 8 to 10 minutes but don't overcook. Blend in a food processor, then add seasoning and serve with a swirl of yogurt.
