
Broccoli Stilton Quiche

Broccoli Stilton quiche is based on a powerful and popular flavour combination – the earthy herbaceous flavour of the broccoli and the intense, richness of Stilton. Here we’ve updated this classic dish by adding Tabasco Green Jalapeno Sauce for a little extra tang. Light and fresh, this quiche would work well as part of a summer buffet. As it uses ready rolled shortcrust pastry, it won’t take long to make either, which gives you more time to work on perfecting your salad dressing.Time and servings

Ingredients
- 300 g of shortcrust pastry
- 3 eggs
- 175 g of stilton
- 200 ml of double cream
- 4 spring onions
- 400 g of sprouting broccoli
- 4 tsp of tabasco green jalapeno sauce
Method
Step 1
Preheat the oven to 200C/Gas 6.Step 2
Line the flan ring with the pastry and bake blind for 15 minutes.Step 3
While the pastry is cooking, blanch the broccoli and refresh in cold water.Step 4
In a bowl, whisk the eggs with the double cream.Step 5
Add the spring onions and Tabasco Green Jalapeno sauce.Step 6
Place the drained broccoli evenly in the tart then repeat with the stilton.Step 7
Pour over the quiche mix (if it's easier, pour the mix when you have placed the tart into the oven.)Step 8
Cook in a preheated oven for about 20-30 minutes, until golden brown.
