
Brown Butter Miso Rice Pops

Brown butter miso rice pops are the grown-up sweet treat we’ve all been missing. Melt umami-rich miso paste into nutty browned butter to make these crispy marshmallow squares super more-ish. Delicious straight from the tin, or chop into bite-sized pieces, tumble into a bowl and pour over cold milk for the ultimate breakfast cereal. Looking for more Adult Lunchbox recipes? Ingredients
- 125g salted butter
- 1 tbsp sweet white miso paste, we used Clearspring
- 275g marshmallows
- 225g rice pops (puffed rice cereal)
- 1 tsp white sesame seeds
- 1 tsp black sesame seeds
- 1 tsp Maldon flaked salt, to sprinkle
Method
Step 1
Set a large pan over a medium heat. To make the brown butter, add the butter to the pan and gently melt. Once melted, keep cooking and allow the butter to bubble and foam, continue cooking until smelling nutty and you can see brown flecks appearing on the base of the pan. Remove from the heat.Step 2
Stir in the miso paste then tip in the marshmallows and stir until melted, this might take 1-2 mins. You can return the pan to a gentle heat to help everything come together.Step 3
Tip in the rice pops and most of both types of sesame seeds. Stir well then scrape into a medium-sized baking tray lined with baking paper. Flatten out slightly then sprinkle over the remaining sesame seeds and salt. Set aside to firm up.Step 4
Slice to serve as squares, or cut into bite-sized pieces, add a handful to a bowl and pour over cold milk to serve.
