Ingredients

  • 200 g of bulgur wheat
  • 1 onion, sliced
  • 0.5 tsp of turmeric
  • 0.5 tsp of cinnamon
  • 0.5 tsp of cumin
  • 30 g of goji berries
  • 50 g of pistachio nuts, toasted and roughly chopped
  • 2 preserved lemons, deseeded and roughly chopped
  • 0.5 lemon, juice only
  • 1 small bunch of mint, leaves chopped
  • 1 small bunch of coriander, leaves chopped
  • 150 ml of yogurt, seasoned (optional)
  • 1 tbsp of olive oil
  • 200 g of green beans, trimmed and halved
  • 600 ml of veg stock

Method

  • Step 1

    Heat the oil in a large-lidded frying pan over a medium heat and cook the onion for 5 mins to soften. Then stir in the turmeric, cinnamon and cumin and cook for another min until fragrant. Add the bulgur wheat to the pan along with the green beans and goji berries.
  • Step 2

    Pour over the stock and bring to the boil, then cover and cook over a high heat for 5 mins. After this, reduce the hob to the lowest heat and cook for another 5 mins.
  • Step 3

    Remove from the heat and stir in the pistachios, preserved lemons, lemon juice and herbs. There will be a tasty crispy layer at the bottom of the dish, mix this through as you go. Serve with the yogurt drizzled over if you like.
