
Burrata, Blood Orange and Radicchio Salad

This salad signals the start of spring - bright, vibrant and zingy. Blood oranges work remarkably well with creamy Burrata - the perfect dish to impress your dinner party guests or brighten up lunch time in less than ten minutes!Time and servings

Ingredients
- 1 whole of blood orange
- 100 g of burrata
- 1 small handful of rocket salad
- 50 ml of olive oil
- 1 tbsp of caster sugar
- 2 tablespoons of lemon juice
- 2 handfuls of radicchio, (A mixed selection)
Method
Step 1
Slice the radicchio and wash, wash the rocket and dry both in a salad spinner or on a clean cloth.Step 2
To make the dressing, whisk the lemon juice and sugar until dissolved, then slowly whisk in the olive oil and season to taste with salt and pepper.Step 3
Toss the leaves in a little lemon dressing and plate up.Step 4
Add the blood orange segments and top with the burrata.
