Ingredients

  • 3 eggs
  • 150 g of plain flour, sifted
  • 1 tsp of vanilla extract
  • 175 g of butter
  • 175 g of caster sugar
  • 180 g of dark chocolate, broken into pieces
  • 12 cadbury mini creme eggs, chopped into small pieces

Method

  • Step 1

    Preheat the oven to 180°C/160°C fan/gas mark 4. Butter and line a 20 x 30 x 4cm baking tin with baking parchment.
  • Step 2

Place the chocolate and butter in a bowl and melt in a microwave or over a pan of gently simmering water. Stir the mixture until it is smooth and then set it aside to cool.
  • Step 3

Whisk the sugar and eggs in a large mixing bowl with a hand-held whisk until the mixture is pale and thick and add the vanilla extract. Whisk the cooled chocolate and butter into the eggs, then gently fold in the flour until everything is evenly mixed. Pour the mixture into the tin.
  • Step 4

Dot the Cadbury Creme Egg pieces on top of the batter, spacing them so that each brownie will have a piece of Cadbury Creme Egg on it.
  • Step 5

Bake in the oven for 25–30 minutes until the brownie is firm to the touch. Leave it to cool in the tin for ten minutes, then place it on a wire rack to cool completely before cutting it into 20 pieces.
  • Step 6

The brownies will keep for up to a week in an airtight container.
