
Cadbury Mini Egg Meringue Nests

This is a cracking Easter recipe that's fun to make and well worth the wait. If mini eggs aren't available, feel free to use any chocolate, like smarties or maltesersTime and servings

Ingredients
- 50 g of cadbury mini eggs
- 2 medium free range eggs, whites only
- 100 g of golden caster sugar
- 1 cadbury flake
Method
Step 1
Preheat the oven to 110˚C, gas mark 4. Grease and line 2 baking sheets with baking parchment.Step 2
Using an electric mixer and a clean grease-free bowl, whisk the egg whites until stiff, add the sugar a little at a time, whisking well between additions to form a thick glossy meringue.Step 3
Fold in the crushed flake and spoon or pipe 16 rounds onto the baking sheets.Step 4
Make a small hollow with a teaspoon to form a nest shape, top with 50g chopped mini eggs. Bake for 3 hours until crisp and dry. Cool.
