Ingredients
- 4 tablespoons of mayonnaise
- 2 tablespoons of olive oil
- 3 mixed peppers, sliced
- 350 g of fusilloni pasta, or any dried pasta shapes
- 380 g of sweetcorn, drained
- 1 lime, zested
- 1 avocado, sliced
- 284 g of m&s cajun chicken
Method
Step 1
Preheat the oven to 200°c/180°c fan/gas mark 6. Cook the chicken in its silver tray packaging for 27 minutes.Step 2
Meanwhile, toss the sliced peppers in the olive oil, salt and pepper. Spread evenly on to a baking tray and add to the oven for 15 minutes, until they begin to char.Step 3
Next, cook the pasta in boiling salted water according to packet instructions, then drain.Step 4
Heat a non-stick frying pan over a high heat, add the corn and cook for a few minutes, stirring occasionally until slighted charred, then remove from the pan.Step 5
To make the dressing, in a small bowl, mix the mayonnaise with the lime zest, about 2 tbsp of the juice and a pinch of salt and pepper.Step 6
Remove the chicken and peppers from the oven, and stir any juices from the cooked chicken tray into the dressing. Slice the chicken breasts into 1cm thick pieces.Step 7
To put the salad together, add half the chicken and half the cooked peppers to a large bowl with the drained pasta. Pour in the dressing and toss together, so everything is evenly coated in the dressing. Then, over the top, add the remaining chicken, roasted peppers, charred corn and sliced avocado.
