Ingredients
- 750g chicken wings
- 320g sweet potatoes, skin on, cut into chunks
- 4 sweetcorn cobettes, each halved to give 2 rounds
- 1 tbsp olive oil
- 2 tbsp cajun seasoning
- 1 (70g) pack rocket
- 300g coleslaw
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7. Place the chicken wings, sweet potatoes and corn in a large roasting tin.Step 2
Add the oil, cajun seasoning and a little salt and pepper; toss to coat. Spread out, cover with foil, then roast for 30 mins.Step 3
Remove the foil and cook uncovered for 15 mins more or until golden and cooked through. Serve with the rocket and coleslaw.
