
Cannellini Bean & Bacon Salad with Sicilian Tomatoes & Garlic Mayo

Ingredients
- 12 rashers of streaky bacon
- 800 g of tinned cannellini beans, drained
- 60 g of fresh basil, leaves picked
- 800 g of sicilian datterini tomatoes, halved
- 4 little gem lettuces, cut into wedges or shredded
- 50 g of grated parmesan
- 100 g of mayonnaise, (for the dressing)
- 2 lemons, zest and juice (for the dressing)
- 1 clove of garlic, grated (for the dressing)
Method
Step 1
First cook the bacon under a hot grill until crispy, roughly 5-8 mins. Remove and set aside.Step 2
In a small bowl, make the dressing by combining all the ingredients with a little salt and pepper.Step 3
Plate up all the other salad ingredients, excluding the bacon, and gently mix together.Step 4
Take the reserved bacon, chop and scatter over each plate. Finish by drizzling over the dressing.
