Ingredients

  • 12 rashers of streaky bacon
  • 800 g of tinned cannellini beans, drained
  • 60 g of fresh basil, leaves picked
  • 800 g of sicilian datterini tomatoes, halved
  • 4 little gem lettuces, cut into wedges or shredded
  • 50 g of grated parmesan
  • 100 g of mayonnaise, (for the dressing)
  • 2 lemons, zest and juice (for the dressing)
  • 1 clove of garlic, grated (for the dressing)

Method

  • Step 1

    First cook the bacon under a hot grill until crispy, roughly 5-8 mins. Remove and set aside.
  • Step 2

    In a small bowl, make the dressing by combining all the ingredients with a little salt and pepper.
  • Step 3

    Plate up all the other salad ingredients, excluding the bacon, and gently mix together.
  • Step 4

    Take the reserved bacon, chop and scatter over each plate. Finish by drizzling over the dressing.
