Caramelised Pineapple, Brown Sugar and Lime Pie

A deliciously tropical pud, this Caramelised Pineapple, Brown Sugar and Lime Pie has a secret ingredient: chilli flakes. “The subtle hum of the chilli enhances the flavour of the pineapple,” says food writer Jess Elliott Dennison, although you can leave it out if you prefer. If you’re serving this as a dinner party dessert, try adding a few splashes of rum to the pineapple. Ingredients

  • 500 g of frozen pineapple chunks
  • 2.5 tbsp of cornflour
  • 2 limes, zested and juiced
  • 150 g of light brown soft sugar
  • 500 g of puff pastry block
  • 1 egg, beaten
  • 1 tbsp of icing sugar, for dusting
  • 6 scoops of vanilla or coconut ice cream, to serve (optional)
  • 1 small pinch chilli flakes
  • 1 tbsp of (approx.) plain flour, for dusting

Method

  • Step 1

    Preheat the oven to 200°C/180°C fan/gas 6. Cook the frozen pineapple, cornflour, lime zest and juice, sugar, chilli and 50ml water in a pan on a high heat for 8-10 mins, stirring often, until you have a thick caramel. Pour into a bowl; leave to cool for 10 mins. Line a baking tray with baking paper.
  • Step 2

    On a lightly floured surface, roll out two-thirds of the pastry to a 21cm x 27cm rectangle. Brush a 1cm border of beaten egg around the edge; transfer to the baking tray. Spoon the pineapple on top
  • Step 3

    Roll out the remaining pastry to 21cm x 27cm. Lay it on top of the pineapple and use a fork to crimp the edges together. Trim the edges with a sharp knife, to neaten, then brush all over with beaten egg and dust with icing sugar. Make a few little cuts in the top for steam to escape.
  • Step 4

    Bake for 35 mins until golden. Serve with ice cream, if you like.
