
Caribbean-Inspired Affogato

Spoons at the ready for this Caribbean-Inspired Affogato, a clever dessert-meets-cocktail hybrid featuring hot coffee, cool and creamy plant-based coconut ice cream and a warming tot of rum. Food stylist and writer Emily Jonzen suggests going all-out on the theme by using rum-infused instant coffee for an extra dash of Caribbean spirit.Time and servings

Ingredients
- 2 tsp of instant coffee (we used little’s havana rum flavour infused instant coffee)
- 50 ml of golden rum
- 2 scoops of of the coconut collaborative coconut & vanilla ice cream
- 1 tbsp of toasted coconut flakes
Method
Step 1
Dissolve the coffee in 50ml boiling water; add the rum.Step 2
Divide the ice cream between 2 glasses and pour over the coffee mixture. Top with the coconut flakes and serve immediately.
