
Carrot and cannellini bean houmous

Ingredients
- 3 carrots, washed and sliced
- 1 garlic clove, crushed
- 2 tsp of cumin seeds
- 1 tsp of turmeric
- 2 tbsp of olive oil
- 1 tbsp of light tahini
- 400 g of cannellini beans, drained
- 1 tbsp of lemon juice
Method
Step 1
Put the carrots in a saucepan with enough water to cover them and a pinch of salt. Bring to the boil, then simmer until tender (about 8 mins).Step 2
Drain (reserving the water), and put the carrots into a blender or mini chopper with the rest of the ingredients. Blend to a smooth paste, adding a little carrot water if too thick.Step 3
Season to taste, then keep it in the fridge until you’re ready to serve.
