
Carrot and Coriander Soup

This is a favourite with the Lactofree Team and is a great pick-me-up for anyone in need of a bit of comfort food. Pair with a crusty ciabatta straight from the oven and you have a winner!Time and servings

Ingredients
- 50 g of lactofree soft white cheese
- 1 clove of garlic
- 850 ml of stock
- 1 tbsp of tomato puree
- 1 pinch of fresh coriander
- 175 g of carrots
- 1 drizzle of olive oil, (or vegetable oil)
- 1 large of onion
- 1 bay leaf
Method
Step 1
Thinly slice the carrots and onion and finely chop the garlic.Step 2
Add to a pan with olive or vegetable oil, cover and allow to sweat for 10 minutes.Step 3
Pour in the stock and bring it to the boil.Step 4
Add the bay leaf and chopped coriander. Cover and simmer for 20 minutes.Step 5
Put the soup into a blender with the cheese and tomato paste and blend until smooth.Step 6
Season to taste and add a small swirl of cream cheese and a couple of coriander leaves to serve.
