This is a favourite with the Lactofree Team and is a great pick-me-up for anyone in need of a bit of comfort food. Pair with a crusty ciabatta straight from the oven and you have a winner!

Ingredients

  • 50 g of lactofree soft white cheese
  • 1 clove of garlic
  • 850 ml of stock
  • 1 tbsp of tomato puree
  • 1 pinch of fresh coriander
  • 175 g of carrots
  • 1 drizzle of olive oil, (or vegetable oil)
  • 1 large of onion
  • 1 bay leaf

Method

  • Step 1

    Thinly slice the carrots and onion and finely chop the garlic.
  • Step 2

    Add to a pan with olive or vegetable oil, cover and allow to sweat for 10 minutes.
  • Step 3

    Pour in the stock and bring it to the boil.
  • Step 4

    Add the bay leaf and chopped coriander. Cover and simmer for 20 minutes.
  • Step 5

    Put the soup into a blender with the cheese and tomato paste and blend until smooth.
  • Step 6

    Season to taste and add a small swirl of cream cheese and a couple of coriander leaves to serve.
