
Carrot and Swede Mash

This deliciously simple carrot and swede mash recipe goes perfectly with a roast dinner. Here we elevate this classic side with the addition of ginger, honey, lemon, thyme, orange juice and olive oil. The dish is a symphony of sweetness, citrus, herbiness, and creamy loveliness. Now it’s just up to you to decide what your main dish will be. We recommend juicy roast pork, with extra crackling, or pan-fried duck breasts.Time and servings

Ingredients
- 1 tbsp of olive oil
- 40 g of ginger, grated
- 2 tbsp of clear honey
- 0.5 lemon, juiced
- 3 tsp of sea salt
- 3 tbsp of thyme leaves
- 1 orange, juiced
- 400 g of swede, peeled and chopped
- 400 g of carrots, peeled and chopped
- 50 ml of whole milk
- 50 g of creme fraiche
- 35 g of unsalted butter
- 1 tbsp of single cream, to serve (optional)
Method
Step 1
Preheat the oven to 180°C/ 160°C fan/ gas 4.Step 2
In a large bowl, add the olive oil, ginger, honey, lemon juice, 1 tsp sea salt, 1 tbsp of the thyme leaves and orange juice and mix together well.Step 3
Add the chopped swede and carrots to the same bowl, mix to combine then tip into a deep roasting dish. Cover with foil and roast for 1 hr or until the vegetables are completely tender.Step 4
Once roasted, add the carrot and swede to a food processor, including any residual juices from the roasting dish and pulse until smooth (you can pulse as smooth or as coarse as you prefer!) and then empty into a saucepan.Step 5
Add the whole milk, créme fraîche, butter, 1 tsp salt and black pepper and fold into the carrot and swede mash and simmer over a gentle heat for 5 mins or until warmed through. Serve with a sprinkle the remaining thyme leaves and a drizzle of single cream, if you like.
