Ingredients
- 2 medium carrots (approx. 200g), scrubbed and finely grated
- 1 small thumb ginger, grated (approx. 1 tbsp)
- 2 oranges, zest finely grated, juiced
- 4 tbsp raisins (50g), or use chopped apricots, figs or dried cherries
- 2 tsp mixed spice or ground cinnamon, plus extra to serve (optional)
- 1 tbsp maple syrup or honey (optional)
- 400g cottage cheese, to serve
- 30g walnuts, chopped, or bran or spelt flakes, to serve
Method
Step 1
Place the grated carrot, ginger, orange zest and juice in a bowl. Fold in the raisins and mixed spice.Step 2
Spoon the mixture into a large jar and drizzle over the syrup, if using. Store in the fridge for up to 5 days, allowing the flavours to develop.Step 3
To serve, spoon cottage cheese into a bowl and top with some of the carrot mixture. Finish with the walnuts, and an extra dusting of spice, if you like.
