Ingredients

  • 175 ml of white wine
  • 500 g of carrots, peeled and cut in half lengthways then cut diagonally in half inch sizes
  • 500 g of parnsips, peeled and cut in half lengthways then cut diagonally in half inch sizes
  • 1 small bunch of thyme
  • 4 garlic cloves
  • 2 tsp of caster sugar
  • 0.5 tsp of salt
  • 0.5 tsp of white pepper

Method

  • Step 1

    Place all of the ingredients and 125ml of water in a saucepan, bring to the boil and mix well.
  • Step 2

    Place a lid on the pan and simmer for 20-30 minutes depending on how you like your carrots cooked.
  • Step 3

    Drain and serve. For a crispier skin finish in the oven.
