The cider and vinegar cut through the rich maple syrup, while tarragon adds a subtle aniseed taste. Ingredients

  • 600g carrots, halved lengthways
  • 200ml crisp apple cider
  • 4 tbsp apple cider vinegar (check for gluten free)
  • 3 tbsp maple syrup
  • 1 tsp chopped tarragon

Method

  • Step 1

    Add the carrots, cider, vinegar and maple syrup to a large lidded casserole dish or frying pan. Bring to the boil, lower to a simmer, pop the lid on and cook for 15 mins, agitating regularly to avoid burning.

  • Step 2

    Remove the lid and turn up the heat. Allow the liquid to evaporate until you’re left with a syrupy glaze.

  • Step 3

    Put the carrots onto a serving plate and scatter over the chopped tarragon; serve straight away.
