
Carrots with a Sticky Cider Glaze

“A side of sweet, tangy carrots brings glossy colour and bags of flavour to a meal,” says food stylist Keiron George, creator of these Carrots with a Sticky Cider Glaze. The cider and vinegar cut through the rich maple syrup, while tarragon adds a subtle aniseed taste. If there’s any leftovers, you could blend them with hot stock (chicken or veg) for an instant carrot soup.

Ingredients
- 600g carrots, halved lengthways
- 200ml crisp apple cider
- 4 tbsp apple cider vinegar (check for gluten free)
- 3 tbsp maple syrup
- 1 tsp chopped tarragon
Method
Step 1
Add the carrots, cider, vinegar and maple syrup to a large lidded casserole dish or frying pan. Bring to the boil, lower to a simmer, pop the lid on and cook for 15 mins, agitating regularly to avoid burning.Step 2
Remove the lid and turn up the heat. Allow the liquid to evaporate until you’re left with a syrupy glaze.Step 3
Put the carrots onto a serving plate and scatter over the chopped tarragon; serve straight away.
