
Cauliflower, Orange and Raisin Salad with Cumin Dressing

Ingredients
- 1 medium cauliflower
- 2 large oranges, segmented
- 60 g of raisins
- 4 tbsp of orange juice, for the dressing
- 40 ml of extra virgin olive oil, for the dressing
- 1 tbsp of runny honey, for the dressing
- 1 tsp of ground cumin, for the dressing
- 1 tsp of cumin seeds, toasted (to serve)
- 15 g of fresh mint
Method
Step 1
Trim the leaves and excess stalk from the cauliflower (save for a soup or stock, or pop in your morning smoothie). Place the cauli head on a chopping board and slice into 3-4mm slices. It should break down into lots of bitesize pieces. Place in a large mixing bowl with the orange segments and raisins.Step 2
Finely chop half the mint leaves and stir through.Step 3
Whisk the dressing, season, and pour half over the salad.Step 4
Tip out onto your serving plate and add the remaining mint leaves and the toasted seeds if using. Serve the rest of the dressing on the side.
