
Cauliflower 'Steak' Burger

It can be difficult to find a good veggie recipe for the barbecue, but this cauliflower 'steak' burger is hearty, full of flavour, and looks the part too. Coated in herbs and spices, this clever veggie burger can more than hold its own against the carnivore barbecue options. After being cut into steaks, the cauliflower is marinated in smoked paprika, crushed garlic and olive oil, to really give it real zing. If you want to make this recipe vegan, leave out the halloumi and make sure your buns are plant-based. If you have a griddle pan, you can make it outside of barbecue weather too.Time and servings

Ingredients
- 2 cauliflower, leaves and stem trimmed
- 4 burger buns
- 4 slices of halloumi
- 2 tsp of paprika
- 1 tbsp of olive oil
- 1 clove of garlic, crushed
- 4 handfuls of lettuce, for each burger
Method
Step 1
Heat up the barbecue. Cut the cauliflowers in half, then cut a 2cm slice from each half to create your ‘steaks’ – save the ends for another dish.Step 2
Make a marinade with the smoked paprika, olive oil, crushed garlic and a little salt.Step 3
Coat the cauliflower slices in the marinade and grill on the barbecue for 15-20 mins, flipping occasionally, until tender.Step 4
Grill the halloumi over the coals and warm the buns on the grates. Putting the cauliflower steaks inside the buns and top with lettuce and the halloumi.
