Ingredients

  • 30 g of cornflour
  • 0.5 tsp of chilli flakes
  • 0.5 tsp of dried oregano
  • 1 tbsp of parmesan
  • 2 tbsp of nutritional yeast
  • 2 eggs
  • 75 g of sun-dried tomatoes
  • 1 large garlic clove
  • 2 tbsp of extra virgin olive oil
  • 15 walnut halves, 10 for the pesto, 5 for the topping
  • 1 handful of fresh rocket leaves
  • 1 handful of large fresh basil leaves
  • 1 medium grilled chicken breast, sliced
  • 100 g of mozzarella, grated
  • 30 g of soft goat's cheese, crumbled
  • 350 g of cauliflower, grated
  • 30 g of blue cheese, crumbled

Method

  • Step 1

    Preheat the oven to 240C/Gas 9 and place a baking tray into the oven.
  • Step 2

    Grate the cauliflower. Place in a microwave-safe bowl and cover loosely, heat for about 4 minutes on high.
  • Step 3

    Place the cooked cauliflower in a fine mesh sieve and wring out to remove excess water. Combine with the corn flour, chilli, ¼ tsp salt, dried oregano, Parmesan, yeast and eggs.
  • Step 4

    Mix by hand until it resembles a dough.
  • Step 5

    Place the mixture on to a chopping board covered with baking paper. Shape into a ball, then flatten to form a flat disc (around 20-25cm in diameter).
  • Step 6

    Use the chopping board to slide the crust onto a hot pizza stone or a baking paper. Bake for 8-10 minutes, until it becomes golden, then remove from the oven.
  • Step 7

    Make the tomato pesto while the crust is in the oven - add the tomatoes, garlic, oil and walnuts to a food processor and mix until reduced to a crumbly puree.
  • Step 8

    Add the fresh basil leaves and pulse a few times until full mixed. Add around 50ml of water, until a spreadable consistency.
  • Step 9

    Make the garnish by spreading as much or as little tomato pesto as you like over the entire surface of the crust. Top with mozzarella, chicken, walnuts, half the goat's cheese and half the blue cheese.
  • Step 10

    Place in the oven and bake for 8-10 minutes until the cheese bubbles and the base is golden. Remove the pizza from the from the oven and sprinkle with the remaining cheese. Top with a handful of rocket leaves, cut into 4-6 slices and serve.
  • Step 11

    Tip: if you're not a fan of blue cheese, have smoked Cheddar instead.
